Taste and use

Salty and malty, with the dark colour coming from the caramel. Because salt comes before the soybeans in the ingredient list, a dish turns too salty sooner than it turns dark.

Dark soy sauce made from water, salt, soybeans (10 per cent) and wheat, coloured with caramel. Salt comes before the soybeans in the ingredient list: the sauce seasons strongly and colours at the same time. Ching's lists fried rice, fried noodles and marinades as its uses.
