Degi Mirch is the version MDH intends for colour: the pack describes it as a blend of special varieties of colourful Indian chillies, calls it mild-hot, and has it added with chopped tomatoes to fried onions until the sauce turns red. MDH stands for Mahashian Di Hatti, the Gulati family spice shop from Sialkot, reopened in Delhi after partition in 1947. The company is based in Gurgaon today.
