Taste and use
Pungent like thyme, with bitterness and a slight burn on the tongue. Fat softens the bitter side. A pinch too much can be tasted right across the dish.
About this product
Tiny seeds that smell of thyme and are used in the smallest amounts. Ajwain goes into the dough for paratha and puri, into pakora batter and into the tempering for lentils. For four portions a quarter to half a teaspoon is enough - more will cover everything else in the pot.
