Taste and use
Mild, with a buttery pull and a thin skin that barely registers. Cooked properly the bean is soft all the way through and keeps its shape in the sauce.
About this product
Dried black eyed beans, cream coloured with the dark mark at the hilum. They cook faster than kidney beans or chickpeas and go into lobia masala, into chaat and into salads. Soak for eight to twelve hours in three times their volume of water, then cook in fresh water until tender.
