Taste and use
Nutty and clearly stronger than the pale chickpea, with a skin you still notice when chewing. Cooked properly the centre is soft while the pea itself stays whole.
About this product
Small brown chickpeas with a thick skin, the desi variety. They stay firmer than the large pale kabuli kind and are cooked for kala chana masala, for sundal and for chaat. Soak for eight to twelve hours in three times their volume of water, then cook for around sixty to ninety minutes.
