Taste and use
Sharp and pungent while raw, nutty with a charred edge once popped. If they turn black rather than grey they are burnt and pull the whole dish towards bitterness.
About this product
Brown mustard seeds, smaller and sharper than the yellow ones on a German spice shelf. They are the first thing into the hot oil: put the lid on, wait for them to pop, and only then add curry leaves, onion and the rest. Also for pickles and Bengali panch phoron. One teaspoon covers four portions.
