Taste and use
Mild and buttery, with a soft centre. Cooked properly the pea crushes between two fingers and still holds its round shape in the pot.
About this product
Large pale chickpeas with a thin skin, the kabuli variety. They are cooked into chole for chole bhature, into chana masala and into hummus. Soak for eight to twelve hours in three times their volume of water, then cook for around sixty to ninety minutes. The small brown kala chana is a different variety and stays firmer.
