Taste and use
Sweet, resinous and very strong, with a numbing feel on the tongue. Not hot in the chilli sense. Two cloves too many push a dish towards the dentist.
About this product
Dried flower buds, whole. They go into the hot fat at the start of biryani and pulao, steep in chai and form part of almost every garam masala. Three to four cloves are enough for four portions. They cook along but are not eaten - anyone who finds one sets it on the rim of the plate.
