Taste and use
Sweet and anise-like, clearly milder than anise itself, leaving a fresh finish in the mouth. Not hot. Good seeds are green; once they turn straw-yellow the aroma is long gone.
About this product
Saunf, whole. In cooking it goes into the hot fat at the start, into spice pastes for lamb curry and into chai. After a meal it sits in a bowl on the table in India and is chewed by the spoonful, here without a sugar coating. One teaspoon seasons four portions, a pinch is enough to chew.
