Taste and use
Warm and faintly cinnamon-like, far milder than the spices beside them. Not hot. They only release into hot liquid; in a cold preparation nothing happens.
About this product
Dried leaves, whole. They go into the hot fat at the start together with cloves and cinnamon and stay in the pot until the dish is done. For biryani, pulao, dal makhani and meat curries. One or two leaves cover four portions; they are lifted out before serving.
