Taste and use
Almost flavourless on their own, faintly nutty, with a light, foam-like structure. Not salted and not hot. Properly roasted they melt in the mouth; unroasted they stay doughy.
About this product
The dried seeds of the prickly water lily, botanically Euryale ferox. In the trade they are sold as lotus seeds, although the plant is not a lotus. The pack contains nothing but the seed. Dry-roasted in a pan they become a snack; simmered in milk they become makhana kheer. The 50 g pack is one kheer for four people.
