Taste and use
Full and slightly sweet, with a floury centre. Cooked properly the bean yields under pressure and still holds together; some are crushed against the side of the pot to thicken the gravy.
About this product
Dried red kidney beans, whole and with a firm skin. They are the bean for rajma chawal, where crushed beans thicken the gravy, and they also go into stews. Soak for eight to twelve hours in three times their volume of water, then cook for around sixty to ninety minutes in fresh water.
