Taste and use
Mild and creamy, softer in the bite than the red kidney bean. Cooked properly the centre is almost melting while the skin still holds the bean together.
About this product
Dried borlotti beans, beige with red speckling, sold under the trade name rosecoco. The markings disappear during cooking and the bean turns an even brown. It goes into curries, into stews and into pasta e fagioli. Soak for eight to twelve hours in three times their volume of water, then cook for sixty to ninety minutes.
