Taste and use
Citrusy and floral, mild and faintly sweet, with none of the bite of other spices. Roasting turns it nutty. It is ready when a seed cracks between your fingers.
About this product
The seed, not the green herb - they share a name and little else. Dhania is the bulk spice of Indian cooking: dry-roasted and ground it gives a curry its body, while whole it goes into pickles and spice pastes. For four portions allow one to two tablespoons.
