Taste and use
Warm and sweetish with a woody, tannic note behind it. Whole bark gives up its flavour slowly and covers nothing. Fresh sticks snap; one that bends is old.
About this product
Dried cinnamon bark in pieces. Indian cooking rarely uses cinnamon ground; it uses it whole. A piece goes into the hot fat before the onion and stays in the pot until the end. For four portions of biryani, korma or chai a two to three centimetre piece is enough.
