Taste and use
Once the water is absorbed, cover the pan tightly, take it off the heat and let it stand for 10 to 15 minutes. If the rice is too firm after that, use more water next time; if it is too soft, use less.
About this product
Sella means parboiled: the rice is soaked, steamed and dried while still in its husk, before milling. That makes the grain firmer – it breaks less while cooking and barely sticks. This is why many reach for sella rather than unsteamed basmati when making biryani. 5 kg sack with a carry handle, a product of India. The cooking instructions on the pack: rinse one cup of rice thoroughly, soak it for 30 to 35 minutes in lukewarm water, then add it with salt to 2.5 to 3 cups of boiling water and cook over medium heat until the rice has absorbed the water.
