Taste and use
Resinous and citrusy, a note of its own that has nothing to do with curry powder. Not hot. In hot fat they release their scent within seconds; once they darken they turn bitter.
About this product
Dried leaves of the curry tree, known in South India as kadi patta. They go whole into the hot fat at the start of a dish, usually together with mustard seeds, and stay in it. For sambar, rasam, coconut chutney and any South Indian dal. For four portions allow ten to fifteen leaves.
About Annam
Annam covers staples from India: rice, lentils, flours, spices and sugar. They are brought to Germany by Transfood, a wholesaler in Ratingen.
