Taste and use
Raw they are pungent and slightly bitter. Only popping in fat takes that edge off and turns them nutty. If they do not pop the oil was too cold, and the dish keeps a rasp in the throat.
About this product
Whole mustard seeds, the way South Indian and Gujarati cooking begins a dish. They go into the hot oil first and have to pop before anything else joins them, which takes a few seconds. For four portions of dal, sambar or poha allow one teaspoon.
