Taste and use
Done right, the balls are glassy-crisp outside and hollow inside. The dough itself tastes almost neutral, salty and floury; the seasoning comes from the filling and the water. Soft spots mean the oil was not hot enough.
About this product
Flat, uncooked dough discs of wheat, corn and rice flour. In hot oil they puff into hollow balls within seconds. The ball is cracked open at the top and filled: chickpeas, boiled potato, onion, plus spiced water. The dish is called Pani Puri in western India, Gol Gappe in the north. Unfried, the discs stay hard.
About Annam
