Taste and use
Raw it tastes floury and almost neutral; after roasting, nutty. Skip the roasting step and the result turns sticky and pasty.
About this product
Wheat semolina, unroasted – rava in southern India, suji in the north. Before cooking it is dry-roasted in the pan until it smells of nuts; only then does upma stay grainy. For halwa and sheera, roasting in ghee is the first step anyway, so unroasted semolina is the right choice there.
About Annam
Annam covers staples from India: rice, lentils, flours, spices and sugar. They are brought to Germany by Transfood, a wholesaler in Ratingen.
