Taste and use

Potatoey and salty, with chilli and the sour note of dried mango, and a cool trace of mint behind it. Medium heat. It is right when it snaps rather than bends.

About this product

Thin fried noodles made in equal parts from potato flakes and chickpea flour, seasoned with chilli, cumin, coriander, dried mango and a trace of mint. Aloo sev goes on top of the finished dish, not into it: over bhelpuri, dahi puri, poha. For four plates of chaat allow two to three tablespoons, around 30 g.
