Taste and use

Tragacanth has neither smell nor taste. It brings no seasoning to a dish, only binding: what it changes is the texture.

About this product

Tragacanth is the dried sap of the shrub Astragalus gummifer, which the ingredient list names explicitly. It comes as hard, translucent lumps and is soaked in water: the gum swells strongly and binds liquid. As a thickener it is listed in the EU under the number E 413 and is added to ice cream and fillings, among other things.
