Taste and use
Full and slightly sweet, with a firm skin and a floury centre. Cooked properly the bean yields under pressure and still holds its shape; if it bursts in the pot, the heat was too high.
About this product
Dried red kidney beans, whole and with the skin on. The bean for rajma chawal, the North Indian dish of thick bean gravy with rice, and for stews and chilli. Whole beans soak for eight to twelve hours in three times their volume of water, then cook for around sixty to ninety minutes in fresh water.
