Taste and use
Sweet-sour in the middle from sugar and tamarind, salty and spiced outside, with sesame, fennel and star anise. Mild heat. They are right when the spiral breaks into layers as you bite.

Rolled spirals of wheat dough with a filling of chickpea flour, sesame, sugar and tamarind, then fried. The filling is sweet-sour, the dough savoury – which is why bhakarwadi tastes unlike anything else on this shelf. At home in Maharashtra and Gujarat. Around 60 g for four people with tea.
