Taste and use
Earthy and faintly peppery, with a bitter tip at the end. The flour is pale beige and finer than buckwheat flour; in dough it still stays noticeably grainy.
About this product
Amaranth flour, known in India as rajgira. Amaranth is botanically not a cereal but a pseudocereal; its flour bakes but forms no gluten network. In Himachal Pradesh it is made into deep-fried flatbreads, and the grain is also popped like popcorn. The dough therefore behaves differently from wheat dough and is shaped by hand.
About KRG
