Taste and use

Mild and faintly sweet, with a starchy, almost chalky feel in the mouth. Clearly more restrained than buckwheat or amaranth flour.

About this product

Flour from dried water caltrops, known in India as singhara or singoda. This is the fruit of a water plant, not the Chinese water chestnut sold in tins. As it is not a cereal, the flour belongs to the fasting foods of the Navratri days, when wheat and rice flour are excluded. It takes the place of wheat and rice flour in whatever is cooked on those days.
