Taste and use
Sweet first, with chilli and cumin behind it, and the acidity of the mango. The mango is grated, not in pieces: the jar spreads rather than crunches.
About this product
Chhundo is grated mango preserved in sugar: 60 per cent cane sugar, 35 per cent mango, with cumin, chilli, coriander and cassia. The maker lists the same jar as Shredded Sweet Mango Pickle at 575 grams. Because sugar is the main ingredient it reaches the plate sweet, and in smaller amounts than a salty achar.
