Taste and use

Sweet and sour at once, and mild. Before serving, sugar syrup goes over it along with a tempering of mustard seed and asafoetida in hot oil; the cake is then cut into cubes and scattered with coconut and coriander.

About this product

Khaman dhokla is a steamed cake made from chickpea flour, a speciality of Gujarat in western India. The mix carries 64 per cent chickpea flour, plus semolina, sugar, citric acid and turmeric. The whole pack is stirred with 200 ml of water and 60 ml of oil into a smooth batter and steamed for 15 to 20 minutes; the pack states five servings.
