Taste and use
Sour and sweet at once: 100 grams contain 37 grams of sugar, with the acidity on top. Tamarind brings the sourness that vinegar or lemon provides elsewhere.
About this product
Dried tamarind pulp, pressed into a firm block and deseeded. A piece is soaked in hot water and then pushed through a sieve; that gives the tamarind paste for sambar, rasam and chutneys. The pack notes that occasional pieces of seed may remain, because the deseeding is done by hand.
