Taste and use
Mild, faintly sweet and starchy, without the bitter note of buckwheat. In dough it binds quickly and firms up fast.
About this product
Flour from dried, ground water caltrops – singhara or singoda in India, not the Chinese water chestnut sold in tins. As it is not a cereal flour, it is used on the Navratri fasting days, when wheat and rice are excluded. There it replaces the wheat and rice flour that do not come to the table on those days.
