Taste and use
Sweet-sour with a faintly resinous note; the powder is light brown. It sours as a dry powder, unlike tamarind or lemon juice.
About this product
Amchur is ground unripe mango: the flesh is dried in slices or cubes and then powdered. The ingredient list names nothing else. In northern India it sours curries, chutneys, soups and marinades – where the south uses tamarind – and tenderises meat in a marinade, much as lemon juice does. The bag holds 100 grams.
