Taste and use

Full, earthy and clearly more bitter than wheat or sorghum flour. The flatbread comes out darker and denser than a wheat roti and tastes best straight off the griddle.

About this product

Flour from pearl millet, called bajra in northern India, bajri in Gujarat and Maharashtra. It is baked into bhakri, a thicker, hand-shaped flatbread served with kadhi and with vegetable dishes. In Rajasthan the flour also goes into khatti rabdi, a dish of flour and yoghurt. It forms no gluten network.
