Taste and use
Earthy and warm with a faintly bitter edge. Not hot. In fat it is done as soon as it smells and has darkened a shade; if it goes brown-black the whole dish tastes burnt.
About this product
Jeera, the spice most North Indian dishes begin with: into hot fat, wait until it browns and smells, then add the onion. Dry-roasted and ground it goes over raita, chaat and lassi. Not the same as caraway, which tastes quite different. One teaspoon covers four portions.
