Taste and use
Strongly resinous with a citrus edge. Dried, they are quieter than fresh ones, so allow a few more. Not hot. Left too long in the oil they turn bitter.
About this product
The leaves of Murraya koenigii, dried. They are not simmered like bay; they are bloomed briefly in hot fat at the start so the oil takes on their scent. The base of every South Indian tadka, plus sambar, upma and potato curry. Ten to fifteen leaves are enough for four portions.
