Taste and use
Raw it tastes beany and slightly bitter; only heat turns that into the nutty note that makes a pakora. If the batter stays raw inside, the bitterness is plain to taste.
About this product
Chickpea flour, known in India as besan. It is the batter for pakora: slices of vegetable are drawn through it and fried. It also thickens kadhi, a yoghurt-based sauce, and carries dhokla and chila, the pancake made from besan batter. It is not a wheat substitute but an ingredient in its own right.
