Taste and use
Clearly bitter, with maple and celery behind it. Not hot. In fat they may stay only seconds: once they turn red-brown, only the bitterness is left.
About this product
Hard yellow seeds, not to be confused with kasoori methi, the dried leaves of the same plant. The seeds go into the tempering for sambar, into mango pickle and into dhokla batter. They are bitter, so a quarter teaspoon, eight to ten seeds, is enough for four portions.
