Taste and use
Earthy and a little sharper than the mung bean, with a thin skin. Cooked properly the bean is soft and stays whole; sprouted it tastes fresher and slightly green.
About this product
Small brown moth beans, called matki in Maharashtra. They are usually sprouted first and then cooked into usal and misal pav, though they also go into curry unsprouted. Whole beans soak for eight to twelve hours in three times their volume of water; for sprouting they are then kept damp until the shoot appears.
