Taste and use
Earthy and faintly malty, with a fine bitterness in the finish. Because the whole grain is milled in, the dough stays darker than with white flour and feels coarser.
About this product
Flour from finger millet, called ragi in Karnataka. Because the bran clings tightly to the grain, ragi is milled as wholemeal flour – little else exists. It makes ragi mudde, dense balls of cooked porridge, plus flatbreads and dosa. The dough needs hot water and is shaped by hand, not rolled.
