Taste and use
Almost neutral, faintly sweet, with no bite of its own – it carries whatever seasoning is added. The batter feels sandier than wheat batter and stays that way.
About this product
Finely milled rice flour, not to be confused with rice starch. In southern India it goes into dosa batter, into puttu and into the fried spirals called chakkuli; in the Konkan it is baked into bhakari. It also thickens dishes that are chilled or frozen, because the liquid does not separate out.
