Taste and use
Strongly nutty and earthy, with clear bitterness in the finish. Not hot. While roasting you cannot watch the colour change - here the nose decides, not a look into the pan.
About this product
Black sesame, unhulled and therefore stronger than the pale kind. In India it goes into til ladoo and into Bengali dishes, and it is scattered as a dark edge over light-coloured food. It cannot be swapped one for one with pale sesame, since it brings much more of its own character. One to two tablespoons for four portions.
