Taste and use
Strong and earthy, with a skin that gives the dish its dark colour. Cooked properly the bean is soft enough to crush against the side of the pot, and the dal thickens on its own.
About this product
Whole black urad beans with the skin on, dark outside and white inside. This is the bean for dal makhani, which turns dark and creamy with long simmering. Whole beans soak for eight to twelve hours in three times their volume of water. The dehusked split form is called urid dal, is white, and is ground for idli and dosa batter.
