Taste and use
A very intense aroma and a slightly bitter taste. Soaked in warm water, saffron turns the water a bright orange-red. Long cooking spoils the aroma, so the infusion goes in towards the end.
About this product
Saffron threads, called kesar in India: the dried stigmas of the saffron flower, of the Super Negin grade according to the pack, the Iranian trade name for long, fully red threads. In North Indian cooking saffron flavours and colours biryani and sweets such as kheer and zarda. The threads are rubbed into a tablespoon of milk and left to stand for half an hour; the milk then goes over the almost finished rice or into the finished sweet. About a fifth of a gram is enough for a litre of sweet dish, often just a pinch; the jar holds 0.5 grams.
