Taste and use
Clearly of corn, faintly sweet, grainier than wheat flour. The finished flatbread is denser and more crumbly than a roti and is allowed to break when folded.
About this product
Yellow flour from whole corn, in Punjab the base of makki di roti – the flatbread that goes with sarson ka saag. Not to be confused with corn starch, the white powder used for thickening: this flour is coarse and yellow and is baked, not stirred in. Corn dough has no gluten network, so it is pressed flat rather than rolled.
