Taste and use
Full and earthy, with a bitter edge well beyond wheat flour. The flour is greyish brown with dark specks from the hull; that is not a fault.
About this product
Buckwheat flour, known in India as kuttu ka atta. Buckwheat is not a cereal, and on Hindu fasting days such as Navratri, Ekadashi or Shivratri, when wheat and rice are excluded, it takes their place. It makes kuttu ke pakore and flat breads. Without a gluten network the dough tears easily and is shaped by hand.
