Taste and use
Very salty and sour, with heat from red chilli. Fennel and ajwain set an anise-like note against it, turmeric the colour and an earthy base.
About this product
Amla, the Indian gooseberry, at 70 per cent, pickled with 10 per cent salt and 10 per cent cottonseed oil. A further 10 per cent is spice: fennel, turmeric, red chilli, coriander, cumin, nigella and ajwain. At a tenth salt this is a very salty achar; it is served by the spoonful alongside the meal, not cooked into it.
About Pachranga
Pachranga goes back to the Dhingra family, who brought their pickle-making from Kaloorkot in today's Pakistan to Panipat in Haryana in 1943. From Pachranga we stock two pickles and amla in sugar syrup.
On to cooking
