Taste and use
Smoky and resinous, camphor-like, with a cool note behind it. Not hot. The pod is fished out before eating; bitten into, it is far too much for one mouthful.
About this product
Large wrinkled pods, dried over an open fire, which is where their smoky note comes from. Black cardamom is not a substitute for green: green belongs in sweets, this one in savoury dishes such as rogan josh, biryani and dal makhani. One pod covers four portions and cooks in whole.
