Cardamom

Aromatic spice pod from South and West India

Cardamom is one of the world's most expensive spices, grown primarily in Kerala and Karnataka. There are two main varieties: green cardamom with floral sweet aroma and black cardamom with smoky earthy flavor. Green cardamom is standard in Chai, Biryani and sweets, black cardamom is used for savory curries and Garam Masala. The pods are usually cooked whole or freshly ground.
