Taste and use
Mild and slightly mucilaginous when cooked, which binds the batter and lets it rise. Ground properly the mixture is white, airy and falls from the spoon in ribbons.
About this product
Split urad beans without the skin, which is why they are white rather than black. Ground and fermented with rice they make the batter for idli and dosa; unground they go into vada and into papad. Dehusked pulses need no soaking; for batter they are watered until they bite through, then wet ground.
