Taste and use
Raw it smells strong, faintly of garlic that is no longer fresh, and tastes sharp and bitter. Fried briefly in hot fat it turns softer in flavour; in parts of India it takes the place of onion and garlic.
About this product
Asafoetida, called hing in India, is the dried resin of a Ferula plant. Because the pure resin is very strong, it is extended, here with edible gum and rice flour/wheat starch, as the ingredient list states. It mainly seasons dal and other pulses, along with kadhi, vegetables and pickles. One to two pinches are enough for a pot of dal for four, fried briefly in hot oil or ghee before the other ingredients go in.
