Asafoetida (Hing)

Resin with onion-garlic aroma

Asafoetida, called Hing in India, is a dried resin from the root of the Ferula plant, which grows primarily in Afghanistan and Iran. Raw it has an intense sulfurous smell, but fried briefly in Ghee or oil it develops a mild flavor reminiscent of onion and garlic. Hing is central to Jain and Brahmin cuisine, which avoids onions and garlic, and is also considered digestive. We carry Hing in powder and block form.
